About us
Z pokorą łączymy japońską prostotę z własną wrażliwością kulinarną. Kultura Japonii stanowi dla mieszkańców Europy niezwykle ciekawe źródło jakże odmiennego podejścia do kwestii jakości posiłków oraz sposobu ich przyrządzania. Prostota posiłków bazująca na świeżym, surowym mięsie ryby oraz różnej postaci warzyw, stanowi doskonałą kompilację wraz z estetyką ich podania. Wśród Japończyków panuje przekonanie o konieczności przygotowania posiłku z wielką starannością, dbając zarówno o walory smakowe jak i wizualną jego formę. Jedzenie powinno oddziaływać na wszystkie zmysły człowieka, wówczas stanowi wartościowe źródło energii oraz inspiracji. Proces przygotowania sushi, jak i jego spożywania, stanowi rytuał, który w prosty i zdrowy sposób, jest ciekawą alternatywą dla naszej tradycyjnej praktyki kulinarnej.
O PASJI DO KUCHNI JAPOŃSKIEJ
Jestem pasjonatem kuchni japońskiej. Pierwszy raz zetknąłem się z sushi 9 lat temu, gdy rozpocząłem pracę w najlepszym wówczas sushi barze w Polsce. Swoją zdobytą wiedzę i umiejętności poszerzałem pracując w sushi-barach w Poznaniu, Warszawie, Wrocławiu oraz Krakowie, a nawet odbywając praktykę w Antwerpii (Belgia). Kolejnym etapem, a zarazem wyzwaniem była pomoc w zorganizowaniu jednego z najlepszych sushi-barów w Poznaniu, który prowadziłem jako manager przez 6 lat (CP). Myśl o stworzeniu własnej restauracji kiełkowała we mnie od kilku lat, aż w końcu stała się ku mojej olbrzymiej radości rzeczywistością. Wyrazem tego stało się DOKKU.
O TRADYCJI SUSHI
Sushi ma bardzo długą tradycję sięgającą już VIII w. n.e., kiedy to wśród Japończyków upowszechnił się buddyzm, a wraz z nim wegetarianizm. Dodatkowym elementem diety stały się ryby poławiane w rzekach, jeziorach i morzach na co zasadniczo miał wpływ fakt, że Japonia jest krajem położonym na wyspach. Japończycy, poprzez krótką i delikatną obróbkę naturalnych produktów, starają się uwypuklić jak najbardziej ich naturalne walory smakowe. W Japonii niezwykle ceni się prawdziwy smak i wygląd produktów, przykładając przy tym olbrzymią wagę do każdego detalu. W kuchni japońskiej nie stosuje się aromatycznych ziół oraz intensywnych przypraw ponieważ mogłyby one przyćmić naturalny smak poszczególnych składników.
